Position Summary
The Lead Bartender is responsible for the service of all beverages at bars, both alcoholic and non-alcoholic. Lead Bartender is responsible for overseeing bar procedures and ensuring all staff are following alcohol service protocols. They must be personable, professional and able to work in an ever changing fast-paced environment. The employee must maintain excellent attendance and be available to work events as scheduled for business needs. Shifts include nights, weekends, and holidays.
This role will pay an hourly rate of $19.25 and is tip eligible

About the Venue
The Donald L. Tucker Civic Center features a 12,500-seat arena, 34 luxury suites, 476 club seats, over 54,000 sq. ft. of meeting and exhibition space and an arena view restaurant, the Spotlight Grille. The arena is home to Florida State Men’s and Women’s basketball and is known for its electric atmosphere and fierce home court advantage. Not only a music and sports venue, the arena also is frequently used for trade shows, large catered functions, receptions, religious services, and classes.
Responsibilities
- Adhere to state, federal and corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests.
- Assist Concessions Manager (CM) with monthly bar inventory and ordering, including continually checking for short-dated/expire product.
- Receive bar orders, put stock away using FIFO rotation method.
- Put in place and set up bars prior to events.
- With the approval of the CM, assign locations to bartenders for each event.
- Pull all liquor and record it on Event Count Sheet prior to bartenders’ arrival for event.
- Oversee event breakdown and cleanup of all bars, equipment, and supplies ensuring that all products are properly stored and organized.
- Check-out and dismiss bartenders as they complete their duties post-event.
- Oversee all bar procedures during events to ensure proper service flow and professionalism.
- Follow and enforce health code standards.
- Report any incidents or issues to Concessions Supervisor or Manager when they arise.
- Coaching staff, when needed, on alcohol compliance, bar procedures, speed of service, and guest interactions.
- Follow bar pre-shift notes and bar menus and provide service as described.
- Take and/or processes orders for drinks; mixes, garnishes and presents drinks using standard ingredient recipes; practices prudent portion control.
- Set up assigned bars; requisitions and stocks all beer, wine, spirits, paper products, straws and stirrers, condiments, ice and produce.
- Maintain stock, prepare and store all fresh fruit and vegetable garnishes and juices and other perishables to ensure product quality. Request additional product or restock as needed.
- Greet guests in a courteous, friendly manner.
- Detect and act upon guest inebriation as trained, escalating to management or security when needed.
- Lock up and store all beverage products, food, equipment items, and perform all closing duties at the end of shift.
- Perform general cleaning tasks to adhere to health and safety standards; keep work area clean and organized.
- Perform other duties as assigned.
Qualifications
The qualifications listed below represent the credentials necessary to perform the essential functions of this position. - Two years or more experience bartending in high volume environment.
- Ability to accurately handle register and revenue collections through POS system is required.
- Ability to meet the company standard of excellence in the areas of guest service, interaction with co-workers, and uniform standards.
- Demonstrate knowledge of liquor laws.
- Ability to prioritize tasks in a fast-paced environment.
- Must have knowledge or ability to learn about various beer, wine & spirits available.
- Ability to be self-directed while working in a team-oriented environment.
- Excellent interpersonal and communication skills.
- Must possess or be willing to obtain valid ServSafe Alcohol certificate prior to working at Donald L Tucker Civic Center.
- Ability to work a flexible schedule including nights, weekends, and long hours.
- Bartending school preferred.
